WHAT IS BUTTERSCOTCH?? Butterscotch is primarily made of brown sugar and butter. The earliest known recipes were in the mid-19th century Yorkshire. Butterscotch and caramel are often confused as they are similar in many ways. The different types of sugar used in the preparation sets them apart. I don't know about you, but I am a sucker for both. HOW TO MAKE BUTTERSCOTCH CAKE First you want to prepare three Add flour, butterscotch pudding mix, and baking powder to a medium bowl, whisk and set aside. Butterscotch cake is delicious and easy to make. 1 cup brown sugar 1 stick butter or 8 tablespoons or 1/2 cup, softened 3 eggs 1 teaspoon vanilla extract 2 cups all-purpose flour 2 1/2 teaspoons baking powder 1/2 teaspoon salt 1 (3.4 ounce) box butterscotch instant pudding 1 1/2 cups buttermilk 1 cup butterscotch chips 1 cup nut pieces (pecans or walnuts) Cream together sugar, butter and eggs with mixer. Add vanilla extract. Whisk together in another bowl the flour, baking powder, salt and butterscotch pudding mix. Add flour mixture along with buttermilk to creamed mixture and mix. Fold in butterscotch chips and nuts with spoon. Spray a 9 x 13 cake pan with cooking spray. Spread cake batter in pan. Bake in preheated 350 degree oven 30 to 35 minutes until center tests done.
