Naturalized: Exotic population is self-sustaining, breeding in the wild, persisting for many years, and not maintained through ongoing releases (including vagrants from Naturalized populations). The rest of India does not know. If they had known that NH 37 Dhaba exists, they would have come by flight to Dibrugarh, travelled by road towards Tinsukia, just to taste the food made by the divine cooks at this place. No “culinary journalist” in India has written about this Dhaba, simply because they did not have the opportunity to visit this part of our great country. This is the first article written by me on this dhaba. Where shall I start. Let me start from breakfast. Fluffy crisp puris. Subtly spiced chana gravy with finely diced ginger and onions as topping. As you dip the puri in the channa, the aroma hits your olfactory cells and there is a surge of gastric juices in your stomach, in anticipation of that unique taste. The puris are not dripping in oil, but miraculously seem as if they are oil free. This is the art that is exhibited by the cooks here. For lunch, always go for fish and rice. The fish is locally caught and not a stale cold storage fish. Go for Kalia or Hisa. Very few bones. The fish floats in the bountiful Assamese gravy and you have to throw away your spoons and forks to dig into the dish with your bare hands. As you gently touch the fish, you can feel the essence of the mighty Bhramaputra flowing to give life to the NE part of India.
