नीबू

नींबू (Citrus limon, Linn.) छोटा पेड़ अथवा सघन झाड़ीदार पौधा है। इसकी शाखाएँ काँटेदार, पत्तियाँ छोटी, डंठल पतला तथा पत्तीदार होता है। फूल की कली छोटी और मामूली रंगीन या बिल्कुल सफेद होती है। प्रारूपिक (टिपिकल) नीबू गोल या अंडाकार होता है। छिलका पतला होता है, जो गूदे से भली भाँति चिपका रहता है। पकने पर यह पीले रंग का या हरापन लिए हुए होता है। गूदा पांडुर हरा, अम्लीय तथा सुगंधित होता है। कोष रसयुक्त, सुंदर एवं चमकदार होते हैं। नींबू अधिकांशत: उष्णदेशीय भागों में पाया जाता है। इसका आदिस्थान संभवत: भारत ही है। यह नींबू, जंबीरी आदि। नींबू सबसे अधिक लोकप्रिय है। इसके उत्पादन के स्थान मद्रास, बंबई, बंगाल, पंजाब, नींबू की उपयोगिता जीवन में बहुत अधिक है। इसका प्रयोग अधिकतर भोज्य पदार्थों में किया जाता है। इससे विभिन्न प्रकार के पदार्थ, जैसे तेल, पेक्टिन, सिट्रिक अम्ल, रस, स्क्वाश तथा सार (essence) आदि तैयार किए जाते हैं। नीबू में ए, बी और सी विटामिनों की भरपूर मात्रा है-विटामिन ए अगर एक भाग है तो विटामिन बी दो भाग और विटामिन सी तीन भाग। इसमें - खेती [ ] नींबू के पौधे के लिए पाला अत्यंत हानिकारक है। यह दक्षिण भारत में अच्छी तरह पैदा हो सकता है, क्योंकि वहाँ की जलवायु उष्ण होती है और पाला तथा शीतवायु का नितांत अभाव रहता है। पौधे विभिन्न प्रकार की भूमि में भली प्रकार उगते हैं, परंतु उपजाऊ तथा समान बनावट की दोमट मिट्टी, जो आठ फुट की गहराई तक एक सी हो, आदर्श समझी जाती है। स्थायी रूप से पानी एकत्रित रहना अथवा सदैव ऊँचे स्तर तक पानी विद्यमान रहना, या जहाँ पानी का स्तर घटता बढ़ता रहे, ऐसे स्थान पौधों की वृद्धि के लिए अनुपयुक्त हैं। नीबू के पौधे साधारणतया बीज तथा गूटी से उत्पन्न किए जाते है...

Welcome to It's That Simple , a column where we talk you through the process of making the dishes and drinks we can make with our eyes closed. Nimbu pani is a staple of summer in South Asia—sold from carts on street corners and served to house guests—and, as I’ve moved around the world, from Hong Kong to Vietnam to Scotland to New York, it’s the pick-me-up that always transports me back home. There’s no one way to make nimbu pani (which translates to lemon/lime water in Hindi), and there are endless regional variations, from lebur shorbot in Bangladesh to guccha soda in Nepal. In Delhi, they call it banta, and it takes the form of lemon-infused soda packaged in glass bottles that open with a satisfying pop and a sizzle of citrus-scented mist when you push a marble to break the seal. In Kolkata, where I grew up, I always order fresh lime soda, which comes with seltzer, mint, and a lime simple syrup, all served separately, which gives me the pure delight of playing mad scientist when I mix the ingredients together. In South Asia, the citrus (nimbu) used for this drink can be yellow or green, and it’s small and thin-skinned like a lime and especially tangy. With the increasing temperature the first thing that comes to my mind is always a refreshing glass of Nimbu Pani. This simple yet heavenly glass of lemonade is seen in every house in India. You can say an Indian version of Lemonade. A drink that I grew up drinking. Every summer we used to have this many times a day. I still remember as soon as me and my brother used to come back from school, first thing our mum used to give us was a chilled glass of nimbu pani. Anamika Sharma is a passionate foodie, a food blogger with a background in aviation and telecom industry for good 15 years.
