Dal bati

Judun yete reshimgathi, I am your Dal, be my bati😅 India has an ancient history. Earlier it was ruled by many kings. Hence it was divided into different kingdoms. Each kingdom has their own different culture which has been followed till now in today's Indian states. One such state which has it's strong historical roots is Rajasthan. As we think about Rajasthan, the first thought comes in our mind is shining golden desert, colourful dresses, Dal Bati Churma and many more. Dal Bati Churma was founded at the time of Bappa Rawal and was known as war food because it was discovered by Mewadsoldiers during war time to save time required to cook chapatis. The dish name itself described everything. Fully deep batis inside the desi ghee( Clarified Butter) and the simple tadka dal makes a mind-blowing combination. Normally, if you visit casual hotels they used to serve it in regular dish, but if you ever visit Marwadi hotel, the way they serve would have difference. In such hotels, Batis are kept in mud pot & the pot would be half filled with desi ghee Along with this, side dishes like Gatte ki Kadhi is served with papadas and dessert. One weird fact you might like to know about formation of Batis by Tribal of Rajasthan. These nomadic tribal people used to keep doughs of wheat under sand before leaving for their work. Till they return, doughs would get baked due to heat of sun over sand. For them, Bati is their prime resource of food even it is easy in preparation & healthy for health.

How one family’s passion has tapped into a bustling Georgia market for farm

We photographed this issue before the summer growing season, so these veggies—bottle gourd et al.—aren’t actually from Kattula Family Farms; they’re from the produce section at Buford Highway Farmers Market. Photography by Bailey Garrot, food styling by Tami Hardeman In 2018, when Ashwin and Sanjata Kattula moved with their two kids from a 5,000-square-foot home in Cumming to a small ranch on a 10-acre plot of land in Gainesville, they had no idea how much their lives would change. Ashwin had been working as an IT consultant for 20 years, and Sanjata was a driver inspector for the Georgia Department of Driver Services. They both shared a passion for gardening, but the hobby had never developed into anything more than growing vegetables in their backyard. But four years later, their passion has transformed their entire life. Ashwin’s hours behind a screen have been replaced by hours outside, on an expanse of land with four greenhouses, a chicken coop, and a handful of guinea fowl poking around. The family now runs The seeds were planted over two decades ago. Newly married and living in Dallas, Ashwin and Sanjata were struggling to find the fresh Indian vegetables they were used to back home in Hyderabad, the city in southeastern India where they’re from. “The grocery stores in Texas and smaller areas didn’t have a complete lineup of all we used to get, so we used to get the seed from India,” Ashwin said. They started growing Indian varieties of vegetables like chili peppers...
