Our Beers

Our beers run the flavor gamut from light and fruity to dark and rich. By varying amounts of the same four ingredients – water, yeast, malted barley and hops – we are able to make beers that are unique and independent, yet part of the cohesive whole that is our product line. Our malts and our hops are imported from England, and our water comes straight from our well in Town Hill, Maine. ABV: 4.8% When we opened back in 1991 this was our first beer. We created this recipe while brewing with our mentor Pierre in his friend's garage in Montreal. We wanted to develop a beer that was smooth and easy-drinking, yet still retained an assertive body to set it apart. The result was a beer with nice caramel tones and a balance of the malt and hop profiles. Over time we have refined the ingredients to achieve what we feel is a perfectly balanced session brew. ABV: 6.0% With the recent explosion of over-the-top hopped IPAs, we wanted to return to an India Pale Ale that was well-hopped, but still balanced and smooth. Our brewers wanted to name it after one of our hardworking staffers, so we decided to name it after Dave—the new guy. This beer is made with one hundred percent Columbus hops and only one malt, yielding a nice earthy tone and spicy flavors. Columbus hops have a citrusy profile, which is more subtle than that found in most IPAs. ABV: 5.6% There is a much debate in the brewing world about the difference between porters and stouts. At one time the two were even considered syn...

Fermented Soda Recipe: Homemade Blueberry Soda

The more fermenting of food I do, the more I love it. My current passion is creating lacto-fermented sodas. Since it’s fruit season, I’ve been experimenting with simple fruit soda recipes, and will share my soda recipe for homemade blueberry soda with you. Recently I served some of my lacto-fermented soda at a potluck and people were so excited to drink it. One woman spoke about how alive it tasted and how energetic she felt after drinking it. This is the truth about the origins of sodas. These drinks that have become such a detriment to modern health started out as health tonics. That’s why you would see soda fountains in pharmacies. The sodas were a way of harnessing the vitamins and minerals stored in the roots or other plant matter and putting them into a tasty drink. When we use the practice of lacto-fermentation to create our sodas we are not only pulling the vitamins and minerals from the plant material, we’re also adding the healthy microorganisms that help our bodies break down and assimilate food. The fermentation process can also create new nutrients such as B vitamins. These sodas truly are a wonderful health tonic to add to your diet! So, let’s get on to the soda recipe. This is adapted from my experience in a soda making class taught by Jennifer Sundstrom and an article called Artisanal Home Soda Fermentation by Charles Eisenstein that can be found on the Weston Price Foundation website. The process takes a couple of weeks; so don’t get started on this soda r...
