• • • • This Butterscotch Cake makes a wonderful dessert to serve friends and family or just as a snack anytime. Cake is one of my favorite things in this world. I could eat it everyday! I love it with coffee, milk or tea. If you like butterscotch, you will love this one. Butterscotch cake is delicious and easy to make. 1 cup brown sugar 1 stick butter or 8 tablespoons or 1/2 cup, softened 3 eggs 1 teaspoon vanilla extract 2 cups all-purpose flour 2 1/2 teaspoons baking powder 1/2 teaspoon salt 1 (3.4 ounce) box butterscotch instant pudding 1 1/2 cups buttermilk 1 cup butterscotch chips 1 cup nut pieces (pecans or walnuts) Cream together sugar, butter and eggs with mixer. Add vanilla extract. Whisk together in another bowl the flour, baking powder, salt and butterscotch pudding mix. Add flour mixture along with buttermilk to creamed mixture and mix. Fold in butterscotch chips and nuts with spoon. Spray a 9 x 13 cake pan with cooking spray. Spread cake batter in pan. Bake in preheated 350 degree oven 30 to 35 minutes until center tests done. Add frosting below. Butterscotch Frosting: 1 cup butterscotch chips 2 tablespoons butter 3 cups powdered sugar About 5 tablespoons milk Melt chips and butter together in microwave or on top of stove. It takes about 1 minute 25 seconds in my microwave. Add powdered sugar and a little milk while mixing with mixer. Continue mixing and adding milk until the get the frosting consistency you want. Ingredients • 1-1/2 cups packed brown sugar • 1/2 cup shortening • 2 eggs • 1 teaspoon vanilla extract • 2-1/4 cups all-purpose flour • 2-1/2 teaspoons baking powder • 1 teaspoon salt • 1 cup 2% milk • 1 cup chopped pecans • PENUCHE FROSTING: • 1/2 cup butter, cubed • 2 cups packed brown sugar • 1/2 cup 2% milk • 1/2 teaspoon salt • 1 teaspoon vanilla extract • 3 cups confectioners' sugar Directions • In a large bowl, cream brown sugar and shortening until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk, beating well after each addition. Stir in pecans. • Transfer to a greased • For frosting, in a small saucepan, melt butter. Stir in the brown sugar, milk and salt. Bring to a boil; cook and stir for 3 minutes. Ingredients • 2/3 cup butterscotch chips • 1/4 cup water • 1/2 cup shortening • 3/4 cup sugar • 3/4 cup packed brown sugar • 3 large eggs, room temperature • 2-1/4 cups all-purpose flour • 3/4 teaspoon baking soda • 1/2 teaspoon baking powder • 1/2 teaspoon salt • 1 cup buttermilk • FILLING/TOPPING: • 1/2 cup sugar • 1 tablespoon cornstarch • 1/2 cup evaporated milk • 1/3 cup water • 1 large egg yolk, lightly beaten • 1/3 cup butterscotch chips • 2 tablespoons butter • 1 cup pecans, chopped • 1 cup sweetened shredded coconut • 2 to 3 cups buttercream frosting Directions • Preheat oven to 375°. Line 2 greased 9-in. round baking pans with waxed paper; set aside. In a microwave, melt butterscotch chips with 1/4 cup water at 70% power for 1 minute; stir. You can use light brown sugar in a pinch. Liquor: you can add a dark liquor, like scotch, to the sauce but this is totally optional. In this recipe I tested whisky and also a non-alcoholic liquor from Flour: I have only tested this recipe with all purpose flour.
