Recipes like this beet and carrot juice were my favorite drink of choice. From ages 16 – 20, I juiced almost daily, at one point working myself up to drinking 30 oz every single morning! At that time I didn’t even drink coffee, and I had crazy insane amounts of energy from juicing. I fell off the wagon when I had my son, but still try to incorporate fresh juice into my life at least every other week or more. Lately, I am making an effort to juice more because the difference in how I feel is night and day! I talked about the many benefits of beets in my beet smoothie post, and they are the star of this juice today. Carrots have always been one of my favorite vegetables, and are perfect for juicing because they add a great natural sweetness to the recipe. I worked myself up to juicing just romaine, celery, and carrots without any fruit at one point and it was plenty sweet! How to make beet and carrot juice First, peel your beet and quarter it. Wash off the carrots and peel the fresh ginger. Cut off the rinds from the orange, then cut in half if necessary to fit in your juicer.
